Château Mouton Rothschild 2007

Pauillac, France

How often are we privileged to drink one of the best? A Bordeaux blend of 81% Cabernet Sauvignon and 19% Merlot, this vintage is past its peak, so if you have any lying around drink it now. After decanting, its coppery colour and initial earthy aroma developed into a nicely balanced, medium bodied, classic wine with elegant tannins and flavours of dark fruit and wood. We paired it with rack of lamb and salad on the patio in a fitting celebration of our early summer.
